  • 1 cup full-fat sour cream
  • ½ cup unsalted butter, melted
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup crispy bacon bits

  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Peel and chop the potatoes into chunks.
  2. Boil potato chunks in salted water until fork-tender (about 15–20 minutes). Drain well.
  3. Mash potatoes until smooth. Stir in sour cream, melted butter, cheddar cheese, paprika, garlic powder, salt, and pepper until combined.
  4. Fold in half of the crispy bacon bits. Transfer the mixture to a greased baking dish.
  5. Top with remaining cheese and bacon bits. Bake for 25–30 minutes or until bubbly and golden brown.
