  • 1 lb ground chicken
  • 1 cup breadcrumbs (plain or Italian seasoned)
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 2 cups marinara sauce (store-bought or homemade)
  • 1 cup shredded mozzarella cheese
  • Fresh basil leaves for garnish

Instructions

  1. In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, eggs, garlic powder, salt, pepper, and Italian seasoning. Mix until just combined.
  2. Form the mixture into golf ball-sized meatballs.
  3. (Optional) Brown the meatballs in olive oil over medium-high heat for 2-3 minutes on each side.
  4. Place the meatballs in a slow cooker and pour marinara sauce over them.
  5. Cover and cook on low for 6–8 hours or high for 3–4 hours.
  6. About 30 minutes before serving, sprinkle shredded mozzarella on top and cover until melted.
