  • 1 cup grated fresh parmesan cheese
  • 1 cup long-grain white rice
  • 2 cups low-sodium chicken broth
  • Juice of 1 lemon
  • ¼ cup fresh parsley, chopped
  • ¼ tsp red pepper flakes (optional)

Instructions

  1. Prepare your ingredients by mincing garlic and grating parmesan. Measure rice and broth.
  2. In a large skillet over medium heat, melt butter. Season chicken breasts with salt and pepper; cook until golden brown (5-7 minutes per side).
  3. Remove chicken from skillet and cover. Add minced garlic to the same skillet; sauté until fragrant (30 seconds).
  4. Pour in chicken broth and lemon juice, scraping browned bits from the pan; let simmer for 5 minutes.
  5. Stir in rice, cover, and cook on low for 15 minutes until liquid is absorbed.
  6. Return chicken to skillet, sprinkle with parmesan cheese, cover for another 5 minutes until cheese melts.
  7. Serve hot, garnished with parsley and an extra squeeze of lemon if desired.
