  • 2 lbs beef chuck roast
  • 2 medium sweet onions, diced
  • 4 garlic cloves, minced
  • 2 bell peppers (red or yellow), chopped
  • 2 medium carrots, sliced
  • 2 tbsp tomato paste
  • 2 tsp smoked paprika
  • 4 cups beef broth
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. 1. Cut the beef chuck roast into bite-sized cubes. Heat olive oil in a large pot over medium-high heat until shimmering. Sear the beef cubes in batches until browned. Set aside.
  2. 2. In the same pot, add diced onions and minced garlic; sauté until onions are translucent (about 5 minutes).
  3. 3. Stir in chopped bell peppers, carrots, and tomato paste; cook for another 3-4 minutes until slightly softened.
  4. 4. Return the beef to the pot and add beef broth, bay leaves, smoked paprika, salt, and pepper. Stir well to combine.
  5. 5. Reduce heat to low; cover and let simmer for 1.5 to 2 hours or until meat is fork-tender.
  6. 6. Taste before serving; adjust seasoning if necessary.
