- 2 medium sweet onions, diced

- 4 cups beef broth
- 2 bay leaves
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- 1. Cut the beef chuck roast into bite-sized cubes. Heat olive oil in a large pot over medium-high heat until shimmering. Sear the beef cubes in batches until browned. Set aside.
- 2. In the same pot, add diced onions and minced garlic; sauté until onions are translucent (about 5 minutes).
- 3. Stir in chopped bell peppers, carrots, and tomato paste; cook for another 3-4 minutes until slightly softened.
- 4. Return the beef to the pot and add beef broth, bay leaves, smoked paprika, salt, and pepper. Stir well to combine.
- 5. Reduce heat to low; cover and let simmer for 1.5 to 2 hours or until meat is fork-tender.
- 6. Taste before serving; adjust seasoning if necessary.
