- 8 oz penne pasta
- 8 oz cream cheese, softened
- 1 packet ranch dressing mix (about 1 oz)
- 1 cup low-sodium chicken broth
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 2 green onions, sliced
- 1 tsp garlic powder
- 1 tsp paprika
- 2 tsp olive oil
Instructions
- Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook until golden brown on both sides (5-7 minutes per side).
- Sprinkle garlic powder, paprika, and ranch dressing mix over the chicken, then pour in the chicken broth. Simmer for about 10 minutes.
- Shred the cooked chicken with two forks and return it to the skillet.
- Stir in softened cream cheese until fully melted and combined.
- Cook the penne pasta according to package instructions until al dente; drain.
- Combine the cooked penne with the chicken mixture in the skillet, stirring well to coat with sauce. Top with shredded cheeses and allow them to melt before serving.
