  • 8 oz penne pasta
  • 8 oz cream cheese, softened
  • 1 packet ranch dressing mix (about 1 oz)
  • 1 cup low-sodium chicken broth
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 green onions, sliced
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 2 tsp olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook until golden brown on both sides (5-7 minutes per side).
  2. Sprinkle garlic powder, paprika, and ranch dressing mix over the chicken, then pour in the chicken broth. Simmer for about 10 minutes.
  3. Shred the cooked chicken with two forks and return it to the skillet.
  4. Stir in softened cream cheese until fully melted and combined.
  5. Cook the penne pasta according to package instructions until al dente; drain.
  6. Combine the cooked penne with the chicken mixture in the skillet, stirring well to coat with sauce. Top with shredded cheeses and allow them to melt before serving.
