  • 2 cups cucumbers, sliced (about 2 medium cucumbers)
  • 1 cup full-fat Greek yogurt
  • 2 tbsp fresh dill, chopped
  • 2 tbsp freshly squeezed lemon juice
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste

Instructions

  1. Wash and slice cucumbers into thin rounds or half-moons.
  2. In a mixing bowl, combine Greek yogurt, lemon juice, dill, garlic powder, salt, and pepper. Whisk until smooth.
  3. Add cucumber slices to the dressing mixture and gently fold until coated.
  4. Cover and chill in the refrigerator for at least 30 minutes to meld the flavors.
  5. Just before serving, toss again and garnish with extra dill or lemon zest if desired.
