- 4 boneless, skinless chicken breasts (about 1 lb)
- 1 cup flour
- 2 large eggs
- 1 cup ranch dressing
- 4 large flour tortillas
- 2 cups shredded lettuce
- 1 cup diced tomatoes
- 1 cup shredded sharp cheddar cheese
Instructions
- Preheat the oven to 400°F (200°C). Season chicken breasts with salt and pepper.
- In one bowl, whisk together flour and spices. In another bowl, beat eggs.
- Dip each chicken breast into egg, then coat with flour mixture.
- Place on a greased baking sheet and bake for 25-30 minutes until golden brown and cooked through (internal temperature of 165°F/75°C).
- Slice the baked chicken into strips. Lay out tortillas and spread each with ranch dressing.
- Layer with lettuce, tomatoes, cheese, and chicken strips; add more ranch if desired.
- Fold the sides of the tortilla inward and roll tightly from the bottom up.
