  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 1 cup flour
  • 2 large eggs
  • 1 cup ranch dressing
  • 4 large flour tortillas
  • 2 cups shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded sharp cheddar cheese

Instructions

  1. Preheat the oven to 400°F (200°C). Season chicken breasts with salt and pepper.
  2. In one bowl, whisk together flour and spices. In another bowl, beat eggs.
  3. Dip each chicken breast into egg, then coat with flour mixture.
  4. Place on a greased baking sheet and bake for 25-30 minutes until golden brown and cooked through (internal temperature of 165°F/75°C).
  5. Slice the baked chicken into strips. Lay out tortillas and spread each with ranch dressing.
  6. Layer with lettuce, tomatoes, cheese, and chicken strips; add more ranch if desired.
  7. Fold the sides of the tortilla inward and roll tightly from the bottom up.
