  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 8 oz lo mein noodles
  • 2 bell peppers, sliced
  • 2 medium carrots, julienned
  • 4 green onions, chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 1/4 cup low-sodium soy sauce
  • 1 tbsp sesame oil
  • 1 cup low-sodium chicken broth
  • 1 tbsp cornstarch

Instructions

  1. Prepare ingredients by chopping chicken into bite-sized pieces and slicing vegetables.
  2. Layer the chopped chicken in the bottom of the Crockpot followed by bell peppers, carrots, garlic, and ginger.
  3. In a bowl, whisk together soy sauce, sesame oil, chicken broth, and cornstarch. Pour over ingredients in the Crockpot.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. About 30 minutes before serving, stir in lo mein noodles until fully submerged in sauce.
  6. Serve hot garnished with green onions.
