- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 8 oz lo mein noodles
- 2 bell peppers, sliced
- 2 medium carrots, julienned
- 4 green onions, chopped
- 4 cloves garlic, minced
- 1 tbsp fresh ginger, minced
- 1/4 cup low-sodium soy sauce
- 1 tbsp sesame oil
- 1 cup low-sodium chicken broth
- 1 tbsp cornstarch
Instructions
- Prepare ingredients by chopping chicken into bite-sized pieces and slicing vegetables.
- Layer the chopped chicken in the bottom of the Crockpot followed by bell peppers, carrots, garlic, and ginger.
