  • 1 cup quinoa
  • 1 ½ cups water
  • 1 cup bell peppers (chopped)
  • 1 cup cucumber (sliced)
  • 1 cup grated carrots
  • ½ cup fresh cilantro (chopped)
  • ½ cup roasted peanuts
  • 3 tablespoons fresh lime juice
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon honey or maple syrup

Instructions

  1. Rinse the quinoa under cold water. In a saucepan, combine quinoa and water; bring to a boil. Reduce heat, cover, and simmer for about 15 minutes until water is absorbed. Fluff with a fork.
  2. While the quinoa cooks, chop the bell peppers and slice the cucumber. Grate the carrots.
  3. In a small bowl, whisk together lime juice, soy sauce, sesame oil, and honey/maple syrup until smooth.
  4. In a large bowl, combine cooked quinoa, chopped veggies, and peanuts. Pour dressing over everything and toss until well combined.
  5. Top with chopped cilantro and give it one last toss before serving.
