  • 2 salmon fillets (about 6 oz each)
  • 1/4 cup teriyaki sauce
  • 1 cup jasmine rice, rinsed
  • 2 cups water
  • 1 cup broccoli florets
  • 1 medium carrot, thinly sliced
  • 2 green onions, chopped
  • 2 garlic cloves, minced
  • 1 tsp sesame oil
  • 1 tbsp honey or brown sugar
  • 1 tbsp rice vinegar

Instructions

  1. Prepare the Rice: In a pot, combine rinsed rice and water. Bring to a boil, reduce to low heat, cover, and simmer for 15 minutes until fluffy.
  2. Marinate the Salmon: In a bowl, mix teriyaki sauce, minced garlic, and honey. Add salmon fillets and let marinate for at least 15 minutes.
  3. Sauté the Veggies: Heat sesame oil in a skillet over medium heat. Add broccoli and carrots; stir-fry for about 5 minutes until tender-crisp.
  4. Cook the Salmon: Remove salmon from marinade (reserve it). In the same skillet, cook salmon skin-side down for about 4-5 minutes on each side until golden brown.
  5. Add Sauce & Serve: Pour reserved marinade over salmon during the last minute of cooking. Serve salmon over rice with sautéed veggies and garnish with green onions.
