  • 2 (6 oz) salmon fillets
  • 1/4 cup teriyaki sauce
  • 1 cup jasmine rice or quinoa
  • 1 cup broccoli florets
  • 1 cup bell peppers, sliced
  • 1 cup carrots, sliced
  • 2 tsp olive oil
  • 1 tbsp toasted sesame seeds
  • 2 green onions, chopped
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp brown sugar
  • 2 cloves garlic, minced
  • 1 tsp ginger, minced

Instructions

  1. Prepare rice or quinoa according to package instructions.
  2. Marinate salmon in teriyaki sauce mixed with garlic and ginger for at least 15 minutes.
  3. Heat olive oil in a pan over medium heat; sauté broccoli, bell peppers, and carrots until tender-crisp (5–7 minutes).
  4. Cook marinated salmon skin-side down in another pan over medium-high heat for about 4–5 minutes each side until flaky.
  5. Assemble bowls starting with rice or quinoa, topped with sautéed veggies and salmon. Drizzle with extra teriyaki sauce if desired.
  6. Garnish with toasted sesame seeds and chopped green onions.
