- 4 cups low-sodium beef broth

- Salt & pepper to taste
- 1/2 cup red wine (optional)
Instructions
- Gather all ingredients and chop onions and mince garlic.
- Heat olive oil in a large pot over medium-high heat. Season the chuck roast with salt and pepper, then sear on all sides until browned (about 5 minutes per side). Remove from pot.
- In the same pot, add sliced onions. Cook over medium heat until golden brown (15-20 minutes).
- Stir in minced garlic, fresh thyme, and bay leaves; cook for another minute until aromatic.
- Deglaze by adding beef broth and red wine (if using), scraping up any browned bits from the bottom. Bring to a simmer.
- Return the roast to the pot and cover tightly with a lid. Transfer to a preheated oven at 325°F (160°C) and cook for 3-4 hours until fork-tender.
