  • 3 lbs chuck roast
  • 2 large yellow onions, sliced
  • 4 cups low-sodium beef broth
  • 1 tbsp fresh thyme leaves (or 1 tsp dried thyme)
  • 2 bay leaves
  • 4 garlic cloves, minced
  • 2 tbsp olive oil
  • Salt & pepper to taste
  • 1/2 cup red wine (optional)

Instructions

  1. Gather all ingredients and chop onions and mince garlic.
  2. Heat olive oil in a large pot over medium-high heat. Season the chuck roast with salt and pepper, then sear on all sides until browned (about 5 minutes per side). Remove from pot.
  3. In the same pot, add sliced onions. Cook over medium heat until golden brown (15-20 minutes).
  4. Stir in minced garlic, fresh thyme, and bay leaves; cook for another minute until aromatic.
  5. Deglaze by adding beef broth and red wine (if using), scraping up any browned bits from the bottom. Bring to a simmer.
  6. Return the roast to the pot and cover tightly with a lid. Transfer to a preheated oven at 325°F (160°C) and cook for 3-4 hours until fork-tender.
