  • 8 oz fettuccine pasta
  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 medium zucchinis, thinly sliced
  • 4 cloves fresh garlic, minced
  • 4 tbsp unsalted butter
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. Cook the fettuccine in salted boiling water according to package instructions until al dente (8-10 minutes). Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Season chicken breasts with salt and pepper, then add to the skillet. Cook until golden brown on both sides (6-7 minutes per side). Remove from pan and let rest.
  3. In the same skillet, add minced garlic during the last minute of cooking the chicken. Then add sliced zucchini and sauté for about 3 minutes until slightly tender but still crisp.
  4. Reduce heat, add butter to melt, then stir in cooked fettuccine and grated Parmesan until well combined.
  5. Season to taste with additional salt, pepper, and red pepper flakes if desired.
  6. Slice chicken and serve over fettuccine, garnished with extra Parmesan cheese.
