- 8 oz fettuccine pasta
- 3 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 medium zucchinis, thinly sliced
- 4 cloves fresh garlic, minced
- 4 tbsp unsalted butter
- ½ cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
- Red pepper flakes (optional)
Instructions
- Cook the fettuccine in salted boiling water according to package instructions until al dente (8-10 minutes). Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Season chicken breasts with salt and pepper, then add to the skillet. Cook until golden brown on both sides (6-7 minutes per side). Remove from pan and let rest.
- In the same skillet, add minced garlic during the last minute of cooking the chicken. Then add sliced zucchini and sauté for about 3 minutes until slightly tender but still crisp.
- Reduce heat, add butter to melt, then stir in cooked fettuccine and grated Parmesan until well combined.
- Season to taste with additional salt, pepper, and red pepper flakes if desired.
- Slice chicken and serve over fettuccine, garnished with extra Parmesan cheese.
