  • 34 boneless, skinless chicken breasts (about 1 lb total)
  • 2 medium zucchinis, sliced
  • 4 cloves fresh garlic, minced
  • 4 tbsp unsalted butter
  • ½ cup grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Bring a large pot of salted water to boil. Add fettuccine and cook until al dente, about 8-10 minutes.
  2. While the pasta cooks, heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper; sauté until golden brown, about 5-7 minutes.
  3. Add minced garlic and sliced zucchini to the skillet; stir-fry until zucchini softens slightly, about 3-4 minutes.
  4. Lower heat; add butter to the skillet and stir until melted. Pour in a splash of reserved pasta cooking water for richness.
  5. Drain pasta and add it to the skillet. Toss everything together to coat pasta in the sauce while adding grated Parmesan cheese.
  6. Garnish with parsley before serving.
