  • 4 cloves fresh garlic, minced
  • 1/4 cup extra virgin olive oil

  • 1 cucumber, sliced (preferably seedless)
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, thinly sliced

  • 1/2 cup pitted Kalamata olives
  • 6 cups romaine lettuce, chopped

Instructions

  1. Prepare the marinade by whisking together olive oil, lemon juice, minced garlic, oregano, salt, and pepper in a bowl.
  2. Place chicken in a resealable bag or dish and coat with the marinade. Marinate for at least 30 minutes.
  3. Preheat grill to medium-high heat. Grill chicken for about 6-7 minutes on each side until fully cooked (internal temperature reaches 165°F). Let rest before slicing.
