  • 2 ripe heirloom tomatoes, sliced
  • 1 cup fresh basil leaves
  • 4 oz aged manchego cheese, thinly sliced
  • 2 thick slices of artisan bread
  • 2 tbsp extra virgin olive oil
  • Salt and freshly cracked pepper to taste

Instructions

  1. Toast the artisan bread slices until golden brown and crispy.
  2. While the bread toasts, wash and slice the heirloom tomatoes into thick rounds.
  3. Brush each toasted slice with extra virgin olive oil and sprinkle with salt and pepper.
  4. Layer the manchego cheese slices on top of the warm toast, allowing them to melt slightly.
  5. Top with fresh basil leaves and serve immediately while warm.
