  • 2 ripe heirloom tomatoes, sliced
  • 1 cup fresh basil leaves
  • 4 oz aged manchego cheese, grated or sliced
  • 4 slices of rustic sourdough bread (about 1 inch thick)
  • 2 tbsp extra virgin olive oil
  • Sea salt and fresh pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toast the bread on a baking sheet until golden brown (about 10 minutes).
  3. While the bread is toasting, slice heirloom tomatoes into thick rounds.
  4. Once toasted, drizzle olive oil over each slice of bread and season with salt and pepper.
  5. Layer sliced tomatoes on top of the bread followed by fresh basil leaves.
  6. Generously add grated or sliced manchego cheese on top.
  7. Return to the oven for an additional 5 minutes until the cheese is slightly melted.
