  • 1 whole chicken (45 lbs)
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp fresh parsley, chopped
  • 1 large lemon, halved
  • 1 large orange, halved
  • 1 cup warm olives (mixed variety)
  • 3 tbsp extra virgin olive oil
  • 4 garlic cloves, minced
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Rinse the chicken under cold water and pat dry with paper towels.
  3. In a bowl, mix rosemary, thyme, parsley, olive oil, garlic, salt, and pepper.
  4. Rub the herb mixture all over the chicken and inside the cavity.
  5. Stuff the chicken with halved lemon and orange along with some olives.
  6. Scatter remaining olives in the roasting pan.
  7. Roast for about 1 hour and 15 minutes until juices run clear when pierced at the thigh.
  8. Let it rest for 10-15 minutes before carving.
