- 1 whole chicken (4–5 lbs)
- 2 tbsp fresh rosemary, chopped
- 2 tbsp fresh thyme, chopped
- 2 tbsp fresh parsley, chopped
- 1 large lemon, halved
- 1 large orange, halved
- 1 cup warm olives (mixed variety)
- 3 tbsp extra virgin olive oil
- 4 garlic cloves, minced
- Salt and pepper to taste
Instructions
- Preheat the oven to 425°F (220°C).
- Rinse the chicken under cold water and pat dry with paper towels.
- In a bowl, mix rosemary, thyme, parsley, olive oil, garlic, salt, and pepper.
- Rub the herb mixture all over the chicken and inside the cavity.
- Stuff the chicken with halved lemon and orange along with some olives.
- Scatter remaining olives in the roasting pan.
- Roast for about 1 hour and 15 minutes until juices run clear when pierced at the thigh.
- Let it rest for 10-15 minutes before carving.
