  • 2 cups cooked rice (preferably leftover)
  • 1/3 cup honey
  • 4 cloves garlic, minced
  • 1/4 cup low-sodium soy sauce
  • 2 green onions, sliced (for garnish)
  • 1 tbsp sesame oil
  • 1 large egg
  • 1 cup panko breadcrumbs
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a large baking dish.
  2. In a bowl, combine ground beef, panko breadcrumbs, minced garlic, egg, salt, and pepper. Mix until just combined.
  3. Roll the mixture into uniform meatballs (about two tablespoons each) and place on a plate.
  4. In another bowl, whisk together honey, soy sauce, and sesame oil.
  5. Spread cooked rice evenly in the greased baking dish and drizzle half of the honey garlic sauce over it.
  6. Layer the meatballs on top of the rice and pour remaining sauce over everything.
  7. Cover with foil and bake for 20 minutes; remove foil and bake an additional 10-15 minutes until golden brown.
  8. Serve hot, garnished with sliced green onions.
