Description

  • 3 ripe bananas (mashed)
  • 1 cup crushed canned pineapple (drained)
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • 2 large eggs
  • 1 tsp vanilla extract
  • 8 oz cream cheese (softened)
  • 2 cups powdered sugar
  • 2 tbsp milk

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan or line it with parchment paper.
  2. In a large bowl, mash the bananas. Mix in eggs, drained pineapple, vanilla extract, granulated sugar, and brown sugar until well combined.
  3. In another bowl, whisk together flour, baking soda, cinnamon, and salt. Gradually fold into the wet mixture until just combined.
  4. Pour batter into the prepared loaf pan and smooth the top.
  5. Bake for 55-65 minutes or until a toothpick inserted into the center comes out clean.
  6. Allow to cool in the pan for 10 minutes before transferring to a wire rack.
  7. For frosting: Beat softened cream cheese until smooth; gradually add powdered sugar and milk until desired consistency is reached. Mix in cinnamon.
  8. Spread frosting over cooled bread.
