  • 4 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1 (28 oz) can diced tomatoes (preferably San Marzano)
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 large sweet onion, chopped
  • 2 tsp Italian seasoning
  • 1 cup low-sodium chicken broth
  • 2 tbsp extra virgin olive oil
  • ½ cup red wine (optional)
  • Salt & pepper to taste

Instructions

  1. Prep your ingredients: Chop onion and bell peppers, and mince garlic.
  2. Sauté vegetables: In the Instant Pot on sauté mode, heat olive oil. Add onions and cook until translucent.
  3. Sear chicken: Season chicken breasts with salt and pepper; add to the pot. Sear for 3–4 minutes on each side until golden brown.
  4. Combine liquids: Pour in diced tomatoes (with juice), chicken broth, and red wine if using. Stir to combine.
  5. Add seasonings: Sprinkle Italian seasoning over the mixture and stir well.
  6. Seal & cook: Close the lid securely with the valve set to sealing. Cook on high pressure for 10 minutes.
  7. Release pressure: After cooking, allow natural release for five minutes before doing a quick release of any remaining pressure.
  8. Serve: Enjoy over pasta or with crusty bread to soak up the delicious sauce.
