- 4 boneless, skinless chicken breasts
- 4 cloves fresh garlic, minced
- 1 (28 oz) can diced tomatoes (preferably San Marzano)
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 large sweet onion, chopped
- 2 tsp Italian seasoning
- 1 cup low-sodium chicken broth
- 2 tbsp extra virgin olive oil
- ½ cup red wine (optional)
- Salt & pepper to taste
Instructions
- Prep your ingredients: Chop onion and bell peppers, and mince garlic.
- Sauté vegetables: In the Instant Pot on sauté mode, heat olive oil. Add onions and cook until translucent.
- Sear chicken: Season chicken breasts with salt and pepper; add to the pot. Sear for 3–4 minutes on each side until golden brown.
- Combine liquids: Pour in diced tomatoes (with juice), chicken broth, and red wine if using. Stir to combine.
- Add seasonings: Sprinkle Italian seasoning over the mixture and stir well.
- Seal & cook: Close the lid securely with the valve set to sealing. Cook on high pressure for 10 minutes.
- Release pressure: After cooking, allow natural release for five minutes before doing a quick release of any remaining pressure.
- Serve: Enjoy over pasta or with crusty bread to soak up the delicious sauce.
