- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 1 can (15 oz) fire-roasted tomatoes
- 4 cups low-sodium vegetable broth
- ¼ cup fresh cilantro, chopped
- 1 cup tortilla chips
- 1 ripe avocado, diced
- Juice of 1 lime
Instructions
- Heat olive oil in a large pot over medium heat. Add the diced onion and sauté until translucent (about 5 minutes).
- Stir in minced garlic and diced carrots; cook for another 3 minutes until softened.
- Add rinsed lentils and canned tomatoes (with juice). Mix well and let cook for about 2 minutes.
- Pour in the vegetable broth, bring to a boil, then reduce heat to simmer until lentils are tender (approximately 30 minutes).
- Stir in chopped cilantro and lime juice just before serving.
