  • 4 medium Russet Potatoes (about 1.5 lbs)
  • 6 slices Bacon (cooked and chopped)
  • 1 cup Shredded Cheddar Cheese
  • 2 Green Onions (chopped)
  • 2 tbsp Olive Oil
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 tsp Garlic Powder
  • 1 tsp Paprika

Instructions

  1. Preheat the oven to 425°F (220°C). Wash and cube the potatoes into bite-sized pieces.
  2. In a large bowl, toss the cubed potatoes with olive oil, garlic powder, paprika, salt, and pepper until well-coated.
  3. Spread the seasoned potatoes on a baking sheet lined with parchment paper and bake for 25-30 minutes, or until golden brown and fork-tender.
  4. Meanwhile, cook bacon in a skillet over medium heat until crispy; drain on paper towels and chop.
  5. Once the potatoes are baked, sprinkle shredded cheddar cheese and chopped bacon over them. Return to the oven for about 5 minutes or until the cheese is melted.
  6. Garnish with chopped green onions before serving hot.
