  • 2 tsp cumin
  • 2 tbsp olive oil (for cooking)

Instructions

  1. Dice chicken breasts into small pieces. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add chicken and cumin; cook until golden brown, about 5-7 minutes.

  3. Lay tortillas flat. Place a generous amount of chicken mixture and cheese on half of each tortilla; fold over.
  4. In the same skillet, add remaining olive oil and cook folded quesadillas until golden brown on each side (about 3 minutes per side).
