  • 4 cups vegetable broth
  • 3 cloves garlic (minced)
  • 1-inch ginger (grated)
  • 2 tbsp low-sodium soy sauce
  • 2 scallions (thinly sliced)
  • 1 tsp sesame oil
  • 2 cups bok choy or spinach (chopped)

Instructions

  1. Gather all ingredients, chop mushrooms, mince garlic, and grate ginger.
  2. Boil water in a pot and cook the ramen noodles according to package instructions until al dente. Drain and set aside.
  3. In a large pot, heat sesame oil over medium heat. Sauté minced garlic and grated ginger until fragrant (about 30 seconds).
  4. Pour in vegetable broth; bring to a simmer. Add sliced mushrooms and cook until tender (approximately 5 minutes).
  5. Stir in soy sauce and adjust seasoning as desired. Let simmer for an additional 5 minutes.
  6. Add chopped bok choy or spinach during the last minute of cooking to retain color and crunch.
