Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together flour, cocoa powder, baking soda, and sugar until combined.
  3. In another bowl, mix buttermilk, vegetable oil, eggs, vanilla extract, and food coloring until smooth.
  4. Gradually add the dry ingredients to the wet mixture; stir until just combined.
  5. Fill cupcake liners two-thirds full with batter and bake for 18-20 minutes or until a toothpick comes out clean.
  6. For the frosting, beat softened butter until creamy. Gradually add powdered sugar, milk, and vanilla extract; mix until fluffy.
  7. Once cooled completely, generously frost each cupcake with buttercream.
