  • 4 large flour tortillas
  • 2 cups starchy potatoes (like Russets), peeled and chopped
  • 1 cup shredded Mexican cheese blend or Monterey Jack
  • 1/2 cup finely chopped onion
  • 1/4 cup fresh cilantro, chopped
  • 1 tsp cumin
  • 1 tsp paprika
  • 2 tbsp olive oil

Instructions

  1. Boil the chopped potatoes in salted water until fork-tender, about 15 minutes. Drain and mash.
  2. In a bowl, combine mashed potatoes, onion, cheese, cilantro, cumin, and paprika. Mix well.
  3. Heat 1 tablespoon of olive oil in a skillet over medium heat. Place one tortilla in the skillet and spoon half the potato mixture onto one side.
  4. Fold the tortilla over like a taco and cook until golden brown, about 3-4 minutes per side.
  5. Repeat with remaining tortillas, adding more oil as needed.
  6. Slice quesadillas into wedges and serve hot with salsa or sour cream.
