  • 1 cup mixed bell peppers, sliced (about 12 peppers)
  • 1 cup carrots, thinly sliced
  • 1 cup broccoli florets
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 1 cup protein of choice (chicken, beef, shrimp, or tofu)
  • 2 cloves garlic, minced
  • 1 tsp ginger, minced
  • 2 green onions, chopped

Instructions

  1. Boil water in a pot and cook the ramen noodles according to package instructions until tender but slightly firm. Drain and set aside.
  2. In a skillet or wok over medium-high heat, heat sesame oil. Add minced garlic and ginger; sauté until fragrant.
  3. Add sliced bell peppers, carrots, and broccoli to the skillet; cook for about 3-4 minutes until slightly tender.
  4. If using protein, add it now and cook until browned and cooked through (about 5-7 minutes).
  5. Pour in the soy sauce and add the cooked ramen noodles; toss everything together until well combined.
  6. Top with chopped green onions just before serving.
