  • 1 cup all-purpose flour
  • 1/2 cup almond flour
  • 1/2 cup unsalted butter, softened
  • 1/3 cup granulated sugar
  • 1/4 cup powdered sugar (for dusting)
  • 1 egg yolk
  • 1 tsp vanilla extract
  • 1/2 cup raspberry jam

Instructions

  1. Preheat your oven to 350°F (175°C). In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Mix in the egg yolk and vanilla until smooth.
  2. Gradually add both flours, stirring until just combined; the dough should be soft but not sticky.
  3. Shape the dough into a disk, wrap it in plastic wrap, and chill for at least 30 minutes.
  4. Roll out the chilled dough on a floured surface to about 1/8 inch thick. Use cookie cutters to cut out shapes, making sure to cut centers from half of them for that signature look.
  5. Place cut cookies on lined baking sheets and bake for 10-12 minutes or until lightly golden around the edges.
  6. Once cooled, spread raspberry jam on half of the cookies and top with another cookie to form sandwiches. Dust with powdered sugar before serving.
