  • 4 ears of fresh corn on the cob
  • 1/4 cup mayonnaise
  • 1/2 cup grated Cotija cheese
  • 2 tbsp freshly squeezed lime juice
  • 1 tsp chili powder
  • 1/4 cup chopped cilantro (optional)

Instructions

  1. Preheat your grill to medium-high heat (about 400°F) or your oven to 450°F.
  2. Husk the corn and rinse under cool water.
