  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cups fresh spinach, chopped
  • 1 cup crumbled feta cheese
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste
  • ¼ cup toasted pine nuts (optional)

Instructions

  2. Tenderize each chicken breast between plastic wrap until about half an inch thick.
