  4. Generously stuff each pocket with the spinach mixture; secure with toothpicks if necessary.
  5. Sear the stuffed chicken in olive oil over medium-high heat for about 4-5 minutes per side until golden brown.
  6. Transfer to a baking dish, pour chicken broth around the chicken, and bake for 20-25 minutes until cooked through (165°F internal temperature).
