  • 2 lbs beef chuck roast
  • 2 tbsp olive oil
  • 1 large sweet onion, diced
  • 4 cloves garlic, minced
  • 2 medium carrots, chopped
  • 28 oz canned whole tomatoes, crushed
  • 1 cup red wine
  • 12 oz pappardelle pasta
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Prep your ingredients by dicing the onions and carrots and mincing the garlic.
  2. In a skillet over medium-high heat, add olive oil and sear the beef chuck roast until browned on all sides (about 4-5 minutes per side).
  3. Transfer the browned beef to your slow cooker along with onions, carrots, garlic, crushed tomatoes, red wine, salt, and pepper. Stir gently to combine.
  4. Cover and cook on low for 8 hours or high for 4 hours until beef is fork-tender.
  5. About 15 minutes before serving, boil salted water in a large pot. Cook pappardelle according to package instructions until al dente; drain.
  6. Shred the beef in the slow cooker using two forks and stir in cooked pappardelle until well combined.
  7. Serve hot, garnished with fresh basil.
