  • 1 cup bell peppers (diced; any color)
  • 1.5 cups cheddar cheese (shredded)
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Chop potatoes, onion, and bell peppers into uniform pieces.
  3. In a skillet over medium heat, sauté onions and bell peppers in olive oil for about 5 minutes until softened.
  4. Add diced potatoes and sliced smoked sausage to the skillet. Stir well and season with salt, pepper, paprika, and garlic powder.
  5. Mix half of the grated cheddar cheese into the skillet, then transfer the mixture to a greased baking dish.
