  • 1/2 cup unsulfured molasses
  • 3/4 cup brown sugar (packed)
  • 1/2 cup unsalted butter (softened)
  • 1 egg yolk
  • 1 tsp ground cinnamon
  • 1/4 cup granulated sugar (for rolling)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a medium bowl, whisk together flour, baking soda, ginger, cinnamon, and salt.
  3. In a large bowl, cream butter with brown and granulated sugars until fluffy.
  4. Mix in egg yolk and molasses until smooth.
  5. Gradually fold dry ingredients into the wet mixture until just combined.
  6. Chill dough for 30 minutes if desired for extra chewiness.
  7. Scoop tablespoon-sized balls of dough, roll in granulated sugar, and place on a lined baking sheet about 2 inches apart.
  8. Bake for 8-10 minutes until edges are set but centers are slightly underbaked.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
