  • 4 boneless, skinless chicken breasts
  • 1 cup buttermilk
  • 2 tablespoons Southwest seasoning blend
  • 1 teaspoon garlic powder
  • 1 cup panko breadcrumbs
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and coat a baking dish with nonstick spray.
  2. In a bowl, mix buttermilk and half of the Southwest seasoning; add chicken breasts and marinate for at least 30 minutes.
  3. In another bowl, combine panko breadcrumbs, remaining seasoning, garlic powder, salt, and pepper.
  4. Remove chicken from marinade, let excess drip off, then dredge in the breadcrumb mixture.
  5. Place coated chicken in the baking dish, drizzle with olive oil, and bake for 25-30 minutes until cooked through (165°F internal temperature).
  6. Let rest for 5 minutes before serving.
