Ingredients

  • 1 medium spaghetti squash
  • 8 oz feta cheese
  • 2 cups cherry tomatoes
  • 3 tbsp extra virgin olive oil
  • 4 garlic cloves, smashed
  • 1/4 cup fresh basil or oregano, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Halve the spaghetti squash lengthwise and remove seeds.
  2. Drizzle olive oil inside each half and season with salt and pepper.
  3. Place squash cut-side down on a lined baking sheet; surround with cherry tomatoes and smashed garlic.
  4. Roast for 30-40 minutes until squash is fork-tender and tomatoes are blistered.
  5. Flip squash, add crumbled feta in the center, and return to oven for another 10-15 minutes until feta is golden.
  6. Scrape out spaghetti strands, toss with roasted veggies and feta, then serve hot.
