  • 2 tablespoons rice vinegar
  • 8 ounces cooked shrimp (peeled and deveined)
  • 1 ripe avocado (sliced)
  • 1 medium cucumber (sliced)
  • 2 tablespoons Sriracha sauce
  • 1 tablespoon sesame seeds
  • Nori sheets (optional)

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear. Cook according to package instructions and stir in rice vinegar after cooking.
  2. In a bowl, toss cooked shrimp with Sriracha sauce until evenly coated.
  3. Use a round mold to layer sushi rice at the base on your plate; press gently.
  4. Add sliced avocado and cucumber evenly across the rice layer.
  5. Top with the spicy shrimp mixture.
  6. Sprinkle sesame seeds over the stack and garnish with nori strips if desired.
  7. Chill in the fridge for 15 minutes before serving.
