  • 6 large eggs
  • 1 cup whole milk (or dairy alternative)
  • 1 cup sharp cheddar cheese, grated
  • 2 cups fresh spinach
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet over medium heat, heat olive oil. Sauté onions until translucent. Add sweet potatoes and garlic; cook until tender, about 10 minutes.
  3. In a large bowl, whisk together eggs, milk, salt, and pepper. Fold in spinach and half the cheese.
  4. Combine sautéed sweet potato mixture with egg mixture in a greased baking dish. Top with remaining cheese.
