  • 1 cup all-purpose flour

  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. Roast sweet potatoes at 400°F (200°C) for 45 minutes until tender. Let cool, peel, and mash.
  3. In a bowl, cream together softened butter and sugar until fluffy (3-4 minutes).
  4. Beat in eggs one at a time.
  5. Fold in mashed sweet potatoes, sifted flour, baking powder, cinnamon, and salt until just combined.
  6. Pour batter into the prepared pan and bake for 50-60 minutes or until a toothpick comes out clean.
  7. Cool in the pan for 10 minutes before transferring to a wire rack.
