  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 1 cup plain yogurt (whole milk)
  • 4 garlic cloves (minced)
  • 1 tablespoon fresh ginger (grated)
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon ground turmeric
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (13.5 oz) coconut milk or 1 cup heavy cream
  • 1 cup jasmine rice

Instructions

  1. In a bowl, combine yogurt, minced garlic, grated ginger, cumin, coriander, turmeric, salt, and pepper. Add the chicken pieces, coating them thoroughly. Marinate for at least one hour.
  2. Heat oil in a large skillet over medium-high heat. Sear the marinated chicken until browned on all sides (5-7 minutes). Remove and set aside.
  3. In the same skillet, add diced tomatoes and simmer for about 10 minutes until they break down.
  4. Stir in coconut milk or heavy cream and cook for another 3-5 minutes until creamy.
  5. Return the seared chicken to the pan and simmer everything together for about 10 minutes.
  6. Cook jasmine rice according to package instructions.
