  • 2 lbs sweet potatoes, peeled and sliced (about 1/8 inch thick)
  • 1 cup heavy cream
  • 2 cups sharp cheddar cheese, grated
  • 2 cloves garlic, minced
  • 2 tbsp unsalted butter
  • 1/4 tsp nutmeg
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly coat a baking dish with nonstick spray.
  2. In a saucepan over medium heat, melt butter and sauté minced garlic for about 1 minute. Stir in heavy cream, nutmeg, salt, and pepper until combined.
  3. Layer half of the sweet potato slices in the baking dish. Pour half of the cream mixture over the sweet potatoes and sprinkle with half of the cheddar cheese.
  4. Repeat layering with remaining sweet potatoes, cream mixture, and finish with the last layer of cheddar cheese.
  5. Cover with aluminum foil and bake for 30 minutes. Remove foil and continue baking for an additional 20 minutes until bubbly and golden brown.
