  • 2 (15 oz) cans cannellini or great northern beans, drained
  • 1 medium onion, finely chopped
  • 4 garlic cloves, minced
  • 1 (4 oz) can green chiles
  • 4 cups low-sodium chicken broth
  • 2 tsp cumin
  • 1 tsp chili powder
  • 8 oz cream cheese, softened
  • Fresh cilantro (optional), for garnish

Instructions

  1. In a large pot over medium heat, sauté onions in olive oil until translucent.
  2. Add minced garlic, cumin, and chili powder; cook for about 1 minute until fragrant.
  3. Place chicken breasts in the pot and cover with chicken broth. Bring to a gentle boil and then reduce heat.
