  • 6 tomatillos, husked and rinsed
  • 2 fresh jalapeños, stems removed

  • 1 cup fresh cilantro, chopped
  • 4 cloves garlic, minced
  • Juice of 2 limes
  • 4 cups low-sodium chicken broth
  • 2 tsp ground cumin
  • 2 tsp dried oregano
  • Salt and pepper to taste

Instructions

  2. In a large pot over medium-high heat, sear the beef chuck roast until browned on all sides; remove from pot.

  4. Blend tomatillos, jalapeños, cilantro, lime juice, cumin, and oregano until smooth; add back into the pot with beef.
  5. Pour in chicken broth and bring to a gentle boil. Reduce heat to low; simmer for 2-3 hours until beef is fork-tender.
