  • 2 medium sweet potatoes (cubed)
  • 4 cups mixed greens (arugula and spinach)
  • 1 small red onion (thinly sliced)
  • 1 cup cherry tomatoes (halved)
  • ½ cup feta cheese (crumbled)
  • 3 tbsp honey
  • 2 tbsp balsamic vinegar
  • 3 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C). Toss cubed sweet potatoes with olive oil, salt, and pepper on a baking sheet.
  2. Roast sweet potatoes for 25-30 minutes until golden brown and tender, flipping halfway through.
  3. In a bowl, whisk together honey, balsamic vinegar, and olive oil until well combined.
  4. In a large bowl, combine mixed greens, roasted sweet potatoes, red onion, cherry tomatoes, and feta cheese. Drizzle with vinaigrette and toss gently.
  5. Serve immediately or chill briefly in the refrigerator before serving.
