Ingredients
- 8 oz rotini pasta
- 1 cup cooked turkey breast (shredded or diced)
- 1 cup cherry tomatoes (halved)
- 1 medium cucumber (sliced)
- 1/2 cup fresh basil leaves (chopped)
- 3 tbsp extra virgin olive oil
- 2 tbsp freshly squeezed lemon juice
- Salt and pepper to taste
Instructions
- Cook the rotini pasta in salted boiling water until al dente. Drain and rinse under cold water.
- While the pasta cools, wash the cherry tomatoes and cucumber. Halve the tomatoes and slice the cucumber into thin rounds.
- In a large mixing bowl, combine the cooled pasta with cooked turkey, halved cherry tomatoes, sliced cucumber, and chopped basil. Toss gently.
- Drizzle olive oil and lemon juice over the mixture. Season with salt and pepper to taste; toss to coat evenly.
- Cover with plastic wrap or transfer to an airtight container; refrigerate for at least 30 minutes before serving.
