  • 2 tbsp fresh garlic, minced
  • 1/2 cup peri peri sauce
  • 1 cup full-fat coconut milk
  • 1 cup jasmine rice
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Gather all ingredients and finely chop garlic.
  2. In a large skillet, heat 1 tbsp oil over medium-high heat. Season chicken with salt and pepper; cook until golden brown (6-7 minutes per side). Remove from skillet.
  3. Add minced garlic to the skillet; sauté until fragrant (about 30 seconds).
  4. Stir in peri peri sauce and coconut milk; let simmer for a few minutes.
  5. Return chicken to skillet; cook for another 5-7 minutes until fully cooked and coated in sauce.
  6. Meanwhile, prepare jasmine rice according to package instructions.
  7. Serve chicken over rice, garnished with cilantro.
