  • 8 oz thin spaghetti
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 can (14.5 oz) diced tomatoes (fire-roasted preferred)
  • 2 tsp Italian seasoning
  • ½ cup grated Parmesan cheese
  • 2 cups fresh spinach

Instructions

  1. Gather and chop any desired vegetables like onions or garlic.
  2. Place the chicken breasts at the bottom of the crockpot.
  3. In a bowl, mix cream of mushroom soup, diced tomatoes, Italian seasoning, salt, and pepper; pour over the chicken.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. About 30 minutes before serving, break spaghetti in half and stir into the sauce until tender.
  6. Shred the chicken in the pot and mix in fresh spinach until wilted; top with Parmesan before serving.
