Ingredients

Scale
  • 2 salmon fillets (6 oz each)
  • 2 tbsp honey
  • 2 tbsp sriracha sauce
  • 2 garlic cloves (minced)
  • 1 tsp fresh ginger (grated)
  • 1 cup bell peppers (sliced)
  • 1 cup broccoli florets
  • 1 cup cooked brown rice or quinoa
  • Lime wedges (for serving)

Instructions

  1. Prepare your ingredients: chop vegetables into bite-sized pieces, and mince garlic and ginger.
  2. Make the sauce: mix honey, sriracha, garlic, and ginger in a small bowl.
  3. Cook the salmon: heat a non-stick skillet over medium heat, add salmon skin-side down, and cook for 4-5 minutes until golden; flip and cook an additional 3-4 minutes while pouring the sauce over the fillets.
  4. Sauté vegetables: in another pan, heat oil and sauté bell peppers and broccoli for about 5 minutes until tender-crisp.
  5. Assemble bowls: layer rice or quinoa at the bottom, top with sautéed veggies, place salmon on top, drizzle with extra sauce if desired, and garnish with lime wedges.
