- 1 tbsp olive oil
- 1 medium onion (chopped)
- 1 bell pepper (chopped)
- 1 stalk celery (chopped)
- 3 cloves garlic (minced)
- 8 oz Andouille sausage (sliced)
- 1 tsp cayenne pepper (adjust to taste)
- 1 tsp dried oregano
- 2 bay leaves
- 4 cups low-sodium chicken broth
- 1 cup long-grain rice
- Salt and pepper to taste
- Chopped green onions (for garnish)
Instructions
- Soak the red kidney beans overnight. Drain and rinse before using.
- In a large pot, heat olive oil over medium heat. Sauté onion, bell pepper, and celery until soft, about 5 minutes.
- Add minced garlic and sliced sausage; cook until sausage is slightly crispy, approximately 3 minutes.
- Stir in soaked beans, cayenne pepper, oregano, bay leaves, salt, and pepper.
- Pour in chicken broth to cover ingredients by an inch. Bring to a gentle boil then reduce heat to low. Cover partially and simmer for 1 to 1.5 hours until beans are tender.
- Stir in rice during the last 20 minutes of cooking. Adjust seasoning as needed before serving with chopped green onions on top.
